MOJO’s Real Cuban is designed after and dedicated to all the paladar owners in Cuba. The term “paladar” is unique to cuban culture. With the rise of Castro, came the fall of privately owned restaurants in Cuba. This did not kill the spirit of the restauranteurs, who for many years moved their establishments to their own homes to avoid being discovered. These privately owned hidden gems becames known as, “paladares.” Today, the government has begun to give licenses to select individuals to own their own cafes and restaurants, but paladares continue to serve as a counterpart to state-run operations for anyone seeking a more vivid interaction with cuban reality, and looking for homemade cuban food.
